San Simon da Costa is a lightly smoked cheese produced in the Terra Cha region of Lugo in Galicia. The pear shaped cheese, sometimes called a dunce's cap, is smoked over birch wood giving a subtle smokey flavour and a nutty after taste. It is a great breakfast cheese and melts deliciously. Try it with a fresh young Albarino or light Rioja.
Ingredients: Pasturised cow's milk, starter culture, rennet, calcium chloride, lysozyme,and salt.
Allergens: Milk, may contain traces of egg.
