La Carrasca Saffron 0.5g
La Carrasca pick and process their saffron with the greatest care. The flowers are grown, in Blancas (Terue), at high altitude (1000m above sea level) which results in lower yields, but higher quality. The family wanted to revive the tradition of saffron production in this area and have been instrumental in breathing new life into the cultivation of this vital crop.
The stigmas from the crocus flower are carefullly removed by hand and then dried. The process is laborious and requires careful handling by the team to avoid damage or loss. Used delicately, saffron adds a warm, earthy depth to a variety of dishes from sweet to savoury.
