This surprising citrus vinegar has been a revelation to us! The producers age Pedro Ximenez grapes, allowing the wine to undergo a slow acetificiation, blended with lemon juice they have made a something very exciting. A wonderful salad dressing or fish accompaniment, it is a great alternative in a cerviche.
