Harvest: manual Vineyards: vines over 30 years old from the Lower and Upper Najerilla valley Winemaking: 75% stemmed grapes Fermentation: controlled at 30º and malolactic in the cask. Time in the cask: 8 months in new French-oak casks and 10 months in American oak. TASTING NOTES Deep cherry colour with a purplish rim. Very aromatic, with a perfect assembling of varietal fruit and vanilla nuances from the oak. A very complex wine on the palate with lots of body and a long finish. The balance between alcohol, acidity and tannins gives it personality and elegance. FOOD PAIRING Filling pulse stews, stuffed white meat, beef, lamb, veal, pork, ewes’ milk cheeses and cheeses.
